Spring Pea and Mint Soup

Here's a simple and delicious recipe that celebrates the flavors of spring:

Spring Pea and Mint Soup

You will need:

2 cups fresh or frozen peas

1 small onion, chopped

2 cloves garlic, minced

3-4 cups vegetable broth

A handful of fresh mint leaves

Sauté Onion and Garlic: In a large pot, heat some olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion becomes translucent and aromatic, about 5 minutes.

Add Peas: Add the peas to the pot and stir well with the onion and garlic mixture. Sauté for another 2-3 minutes.

Pour in Vegetable Broth: Pour in enough vegetable broth to cover the peas and bring the mixture to a simmer. Let it cook for about 10-15 minutes, until the peas are tender.

Blend: Once the peas are cooked, turn off the heat and allow the mixture to cool slightly. Then, using an immersion blender or transferring the mixture to a blender in batches, blend until smooth.

Add Mint: Tear the fresh mint leaves into small pieces and add them to the blended soup. Blend again until the mint is well incorporated and the soup is smooth.

Adjust Consistency: If the soup is too thick, you can add more vegetable broth to reach your desired consistency. Season with salt and pepper to taste.

Serve: Ladle the soup into bowls and garnish with a sprig of fresh mint leaves. Serve hot and enjoy the fresh flavors of spring!
